Red Velvet M&M Brownies

Last night I picked up my Eats cookbook and decided I’d give one of the Valentine desserts a try.  This one was so easy and only required 4 ingredients (gotta love that!).  I ran to the store quickly and picked up a box of red velvet cake mix and gave it a try!

I loved how easy they were and my hubs loves how tasty they were so I thought I’d share it today!

Ingredients:

1 box red velvet cake mix

2 eggs

1/3 cup vegetable oil

1 cup M&Ms (I used Valentine ones) and a few for garnish

Recipe:

Preheat oven to 350 degrees.  Grease 9 x 13 (I used an 8 x 8 so they are thicker) baking dish.  Set aside.

Combine the first 3 ingredients in a mixing bowl with a spoon (batter will be thick).  Stir in M&Ms.

Spread batter across the bottom of prepared pan and bake about 14 minutes (if you do an 8 x 8 dish, I baked for 24 minutes) or until a toothpick inserted in the middle comes out clean.

After you pull the warm brownies out of the oven, sprinkle a few extra M&Ms on top.  Cut into squares and serve. 

Of course, my pictures don’t do the recipe justice (compared to Shay’s – her pictures always look amazing!).

    I love how simple Shay’s recipes are! I just saw that she has a new cookbook with crockpot recipes coming out late summer! I have a bunch of Christmas m&m’s leftover and might try this recipe today!
