How is it possible that it’s already the second week of November?! I mean, don’t get me wrong of course I’m excited for all the Christmas festivities I have planned this year but it’s just crazy how fast this year has gone!
Also – I want to give BIG props to myself for the fact that I actually cooked 3 meals this last week.. yeah you read that right.. 3 dinners in one week (we had quite a bit of leftovers to help with the other days!)! To most of you, that’s pitiful but to me.. it’s a huge win! I’m teaming up with Erika and Andrea today to chat about what’s been going on in my kitchen lately!
We made Chicken Enchiladas on Sunday and they were pretty tasty! I’d never had them before but was pleasantly surprised 🙂 One change I’d make is, I’d buy bigger tortillas (and maybe corn versus flour) and make sure they are stuffed full!
On Tuesday, I made Slow Cooker French Dip Sandwiches (per the hubs request) and they actually were pretty great too! I eat the meat by itself versus a sandwich but the sandwich was husband approved! 🙂
I also made breakfast for dinner one night because I love breakfast 🙂
If you’re looking for a yummy breakfast for the holidays, a favorite of ours is this breakfast casserole! It’s one that we definitely make on rotation every few weeks especially when we’re hosting! We also love Slow Cooker Chicken Fajitas and this Slow Cooker Chicken Cordon Bleu recipe as well!

All your recipes look great- would love the full recipes! I learned the hard way that flour tortillas get mushy when they are leftover (even though I like them better) so corn is totally the way to go 🙂 Have a great week girl!

Yes to all of these! I may have to whip up the french dip recipe. I seriously use to love going to Bennigans back in the day and that was always my choice!
