We don’t have huge plans this weekend and I’m so excited!  My plans: eat a lot of junk food (hello queso and chips!), have just as many margaritas, perfect some DIY projects, visit the Bachman’s Fall Idea House (so I can have serious fall house envy) and lunch with my Brother!  That’s it… and it’s glorious!  I don’t need to feel “popular” or need a million “plans” in order to be happy.. just give me some queso and margaritas and my husband I’m  set! 🙂

White Chocolate Pumpkin Snickerdoodle

I made these cookies for the recent wedding weekend and my oh my… believe me when I say you need to make them immediately!  Like go to the store right now and get all the ingredients!  Who cares about work, right?! 🙂 I’m not just saying that because they were referred to as “indulgent” and “so good” but because they are so easy!!

I followed the recipe from Sally’s Baking Addiction and they just scream fall! Honestly, the dough takes about 10 maybe 15 minutes to prep and then you’re basically done, right?!  I mean after you bake them I suppose!

Ingredients:

  • 1/2 cup unsalted butter
  • 1/4 cup packed light or dark brown sugar
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 6 Tablespoons pumpkin puree 
  • 1 and 1/2 cups all-purpose flour 
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon, divided
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup white chocolate chips or chunks

Recipe:

  1. Melt the butter in the microwave. In a medium bowl, whisk the melted butter, brown sugar, and 1/2 cup granulated sugar together until no brown sugar lumps remain. Whisk in the vanilla and pumpkin until smooth. Set aside.
  2. In a large bowl, toss together the flour, salt, baking powder, baking soda, 1 and 1/2 teaspoons cinnamon and pumpkin pie spice. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough will be very soft. Fold in white chocolate chips. They may not stick to the dough because of the melted butter, but do your best to have them evenly dispersed in the dough. It might be easier to use your hands for this! Cover the dough and chill for 30 minutes, or up to 3 days. Chilling is mandatory.
  3. Take the dough out of the refrigerator. Preheat the oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats.img_8062
  4. Roll the dough into balls, about 1.5 Tablespoons of dough each. Mix together the remaining 1/2 cup of granulated sugar and 1/2 teaspoon of cinnamon. Roll each of the dough balls generously in the cinnamon-sugar mixture and arrange on 2 baking sheets. Slightly flatten the dough balls because the cookies will only slightly spread in the oven.
  5. Bake the cookies for 8-10 minutes. The cookies will look very soft and underbaked. Keeping them in the oven for longer may dry them out.  Remove from the oven and press a few more white chocolate chips onto the tops, if desired. If you find that your cookies didn’t spread much at all, flatten them out when you take them out of the oven.
  6. Allow the cookies to cool for at least 10 minutes on the cookie sheets before transferring to a wire rack. The longer the cookies cool, the chewier they will be. I let them sit out for at least 1 hour before enjoying.

What’s Up, Wednesday?!

Hello and Happy Wednesday!! Logan and I are headed to the Ryder Cup  to cheer on Team USA and we are so excited!  We decided to do a practice round this time (we did a tournament round at Whistling Straits for the 2015 PGA Championship) since it’s a little more laid back with the golfers and hopefully a little less busy!

What we’re eating this week:

A few years ago, Logan got a Ronco for Christmas and we’ve been using that baby so much lately!  We marinate chicken breasts/drummies and put it in there- set for 45 minutes and it’s so delicious!  We’re making salmon this week and we’re planning to try out this recipe!  I made some yummy white chocolate pumpkin snickerdoodle cookies a few weeks ago and am sharing the recipe tomorrow!  I also posted about Logan’s favorite go to breakfast! It’s so easy and can be made ahead of time for the week!

What I’m reminiscing about:

Summer! It’s only been a few weeks of cooler weather but I’m already missing the hot and humid weather!

Blanket Scarves!  Seriously… if you didn’t notice, they’re all over my Instagram 🙂 I just love how cozy and easy they put together an outfit. I’m loving this one!

What we’ve been up to:

I posted about our weekend whereabouts on Monday! We attended a fun charity event this past weekend and we had our last wedding of the season a few weeks ago which was definitely one for the books!  We’re headed to the Ryder cup today – and we’re definitely decked out in some Red, White and Blue!

What I’m dreading:

All the driving in the next few weeks!! We’re headed to see My BIL and his girlfriend and Logan and I are so excited to spend some time with them (and see their apartment, finally!) but i’m not excited about the drive down!  Can someone please invent teleportation (if that’s the word I’m meaning!)??  Would love if we could just get there in 20 minutes 🙂

What I’m working on:

Lots of fun fall posts!  I have a post on some of my “fall fashion”, fall date ideas, a diy fall wreath, a fall house tour and more!  If it can’t be summer weather, I’m trying to soak in the fall!

All of the holidays coming up!!  It’s almost October which means it’s almost November which means it’s basically Christmas 🙂

What I’m watching/reading:

We finally got caught up on Mr. Robot and that show always has some twist to keep you thinking!  Ready for the next season!!

I recently read In a Dark Dark Wood as a recommendation from Reese Witherspoon and that certainly kept me on my toes!  If you like more of a suspense thriller, it’s right up your alley!

We’re also visiting my BIL and his girlfriend next weekend and we’ve never been to their place in Milwaukee!  Erika is great with planning and has a whole weekend planned for us- it’s going to be so much fun!

We have a fun weekend planned with my family as well the weekend after 🙂 love family time!

What else is new?

Not much! Just enjoying life!  I’m excited for some fall posts coming your way this week and next!  Get excited 🙂 Plus. it’s always fun to see a little bit of other people’s homes (not to be creepy or anything!) so you won’t want to miss our fall home tour!

White Chicken Chili – hands down!! We have a recipe from my husband’s coworker and it’s seriously the bomb.com!  I’ll be sharing it on this little space within the next few weeks (along with some great (and easy) chicken fajitas that I mentioned previously!) so keep your eyes out!

My Husband’s Favorite (and easiest) Breakfast!

It takes a lot for my husband to actually like something (food wise)… he’s not picky by any means but he has pretty high standards for food!  So when he told me he wanted some kind of overnight oats for breakfast (he LOVES oatmeal- me, not so much!) I told him I’d give it a try!  It’s the least I can do since I don’t cook often.. still working on that!

He loves bananas, peanut butter and chocolate chips so it was only necessary to have those as a part of it.  The hubs sent me this recipe from Pinterest and said he wanted to try the Chunky Monkey one minus the coconut so off to the store I went!  After making this for one week, I just guestimate the amounts of each item now and it’s really impossible to mess up! 🙂

I’m sure so many people already make these but in case you don’t and are looking for an easy breakfast- these Banana Peanut Butter Chocolate Chip Overnight Oats are a win!

Ingredients!

And of course I took a picture of every step because blog posts are boring with no pictures!

I first add 1/2 cup of oats (not instant!) to a mason jar (or do multiples at a time if you want it for the week!).

I then add about 3/4 (or more – just make sure it covers the oats with a little bit more on top for the other ingredients) of milk- we use 2% because that’s what the hubs loves but you could use skin or almond milk too for added flavor!

Add about 1 tsp of honey – I usually  just guestimate how much to put in because I hate dirtying up extra dishes!

Then add about 1 tbsp of peanut butter- this I usually just guess as well now.. I know the hubs loves peanut butter so I probably add a little more than necessary 🙂

I cut up and add half a banana to each mason jar.

And lastly, add in the chocolate chips!

Put on your lid and give it a big shake!

You’re done and ready to put in the fridge for the week!

We’ve tried Apple Cinnamon and a berry one before but none seem to thrill him as much as this one! 🙂 It’s an easy and healthy breakfast meal so it’s a win in my book!

Weekend Whereabouts!

Happy Monday, y’all… I’m not sure if that’s such a thing but it’s almost Tuesday which means it won’t be Monday forever!  This weekend was SO great!  The hubs and I had a full weekend with no plans and the world at our finger tips.. or at least Minneapolis 😉

Friday night was a nice chill night!  The hubs met a friend at a brewery for a few brewski’s before heading home and I de-cluttered our kitchen.. Win win, right?! We caught up on Mr. Robot (does anyone else watch that crazy show?!) and then hit the hay! The hubs got up real  early Saturday to meet a buddy for golf.. no thanks! And I set out shopping because why not?!

Yes, I totally took a “mirror selfie” in Kirklands! You have to try the mirrors out, am I right?!

I went to Kirklands first to browse since I hadn’t been there in years.. and it did not disappoint! So many monogram items which as you know.. I LOVE! And also tons of fun Halloween and fall decor! I stopped by B&BW for a few candles because supposedly they were all on sale ($12.50) and I had a $10 off coupon.. Little did I know it was a select few that were on sale.. and of course not the ones I went there for but I got some anyways because fall candles are my life.

BIIIIIIIINGO!!!!

After shopping a bit, the hubs and I hit up some Bingo at Wild Bill’s in town!  We used to go all the time but then adult life happened and apparently we’re too busy for that fun stuff! We didn’t win which always gets me so mad.. and the guy across from us won twice in a row so I clearly wasn’t feeling that!  I did, however, enjoy some Mimosas and queso so I guess I did actually win after all 🙂

While the hubs enjoyed playing some Buck Hunter game.. I played with him but my gun seriously DID NOT work!! Every time I shot, nothing happened so I kept getting 0% accuracy and 0 points.. I refuse to play ever again!!!

I had a few choice words about it but then moved on and made the hubs take a selfie with me and Big Buck.. he clearly wasn’t impressed! #nosurprise #hesembarassed

After blowing all our money at Bingo – we decided to hit up a charity event that our friend told us about, for Underground Rescue and it was at a brewery in Minneapolis so it was a double win!  Seriously though…

We were in love with Ozzy.. unfortunately (fortunately for him!) he was adopted before we could even make a decision!!

I could have taken home every single dog, no problem!! The hubs wasn’t on board for 3 dogs (since we already have Destin and Leinie) until he met Oliver….

We aren’t huge fans of Chihuahuas normally but this little guy LOVED my husband!  His story was so sad- he’s about 7 years old, he is blind in one eye (from glaucoma) and has been treated so badly his whole life!  He doesn’t love being on a leash (as he was yanked so much for breeding) and is nervous around men (surprisingly he liked Logan!) but he’s great with kids and other pups -so sweet!!  He’s currently with a foster family thankfully but he needs a forever home!

And so do all these pups and so many more!! If you’re looking to add a little bundle to your family or even to foster some doggies, please look into Underdog Rescue! It’s such a great organization and they really are looking to help as many dogs as possible!

After the event, we headed to Jess and Jeff’s house to catch up a bit and for a few drinks (and snacks of course, because I need to eat every 20 minutes or you’ll hear “I’m hungry!!” 50 times!).

Jess set out little snacks for us (and wine, duh!) and let me tell you.. the Tostitos Spinach Dip is so good!! I know it’s pre-made and probably doesn’t sound like it would be the best but it’s definitely an easy and quick snack!

We came home for the night and were in bed by 11! Totally my kind of night 🙂 Sunday was a day of decorating for fall (I’ll be sharing our house tour with the fall decor later this week!), grocery shopping and crossing things off my honey-do list for the hubs!

I made White Chocolate Pumpkin Snickerdoodle cookies for the wedding last weekend and boy were they yummy!  I’m sharing the recipe next week!

We met a few people for the hubs birthday Monday and they are so special to us! Lunch with Jess and a few drinks with the newlyweds!

The hubs wasn’t feeling the best unfortunately so we were home by 4:45 and he was in bed by 6:30! Some birthday for my now 30 year old..!

PS- don’t mind the “golf attire”.. we thought we were going golfing after lunch!

This is my confessions…

I blinked and it’s already end of day Thursday.. SCORE!! I thought I’d share just a couple random thoughts… because you’re all interested, duh! 🙂 Some are awkward and some are greeeeaaattt!  And a few pictures because blog posts are kinda boring without pictures!  Does anyone have these thoughts?!

  • Instagram Pictures: What do I write about the picture before I post it?  Do I put a long descriptive post, short and sweet post, just emojis or nothing?!  My “witty” self struggles every time!!

Real life: Awkward! Has nothing to do with this post but posts are boring without pictures!

  • Coupons: So I am TERRIBLE at using coupons!! I always keep some on the fridge and just completely forget to use them and then 6 months later, I realize they’re expired.. BUT on this particular Wednesday I decided to buy a ton few cutesy Halloween things from Michaels and remembered to look up their coupons!  They just so happened to have a 20% off coupon and after I got up to the register with all my purchases – they said the coupon doesn’t actually start until 4pm.. IT WAS A WEDNESDAY!! Stupidest thing ever.. shows that I guess I really shouldn’t try to use coupons!!
  • Mirror selfies: How do people get the “perfect” mirror selfies?! When I have a cute outfit on, I’d like to document it.. because it happens so rarely BUT I can never get the angle just right, or the lighting.. it’s a serious struggle! Any pointers?

  • Jeans to formal occasions: Why would anyone wear jeans to a wedding…?? I have never understood that!  I know some weddings are casual but it’s a wedding.. dress up a little bit at least! Plus it’s an excuse to get cute pictures taken looking nice 🙂
  • Old school beats: Suga’ Suga’ circa 2003 came on the radio yesterday and it was the best day ever!  I can still remember doodling in my school planner the lyrics to this song 🙂 Anyone else feel me on that song??
  • Catfish: How does anyone still get Catfished?? Love the TV show but seriously.. it’s 2016 people!
  • Love: The fact that it’s almost October which is basically November and that’s almost to December.. so it’s basically Christmas next month!! And guess who’s excited for that?!

The last of the weddings…

Whew.. and just like that, wedding season is over for us and suddenly we have some free weekends! #iwish #howaretheweekendsstillfull

This last wedding was such a great one to end our summer with.. it was for two great friends and it was just a plain old fun time!

I wish I had a ton of pictures to “document” our time but it turns out, we were too busy dancing and enjoying our time to take some!  But don’t worry, I have a few to keep your interest 🙂

Friday night, we had the Rehearsal and Rehearsal Dinner (are those both really capitalized?) for the wedding at Stella’s 97 in Forest Lake.  Such a cute place on the golf course- the hubs and I got there WAY early so we enjoyed a drink on the patio!

A) I love this husband of mine and B) what is going on with my eye?! Apparently there’s a little “sparkle” in there!

We all visited for a while with some drinks before the rehearsal started and then did a few “run throughs” for the big day!  Dinner was family style and boy was it good!  We had chicken, steak, hash and teriyaki green beans.. yum!! It makes me hungry just thinking about it! And the mini bundt cakes.. to die for! Honestly.. I need to make myself some and hope they’re as good as Nothing Bundt Cake! 🙂

Had to get a picture of the Bride & Groom practicing their dance for the big day when they thought no one was watching! So sweet! 🙂

The girls headed back to a house the Bride rented for the night (and I wish I would have taken a few pictures of it because it was a dream!) while the boys dispersed to different locations (the hubs went home!).  That next morning, I was first up for hair and we kicked off the morning with an egg bake, bacon and some mimosas! We also had bridal movies playing throughout the day.. Such a cute touch and so much fun 🙂

Fun fact: One of my BFF’s Jess was the photographer at their wedding.. She’s seriously AH-MAZING!! So I’m dying to see all the pictures! 🙂

The ceremony was so sweet (Elaine’s brother married them!) and it seemed it went off without a hitch!

Can we just talk about how beautiful all the flowers were for the wedding?!  They were all done up from the Farmer’s Market and serious swooning was going on!!

Elaine was seriously SUCH a beautiful Bride.. I can’t even tell you how much amazing it was to see her get married!

The rest of the wedding consisted of eating, drinking and dancing! My kind of night 🙂

Oh my.. I almost forgot the story of my hubby’s pants..

You can see them more in this picture.. he ordered the pants (2 pairs to make sure he got the right size!) a few months ago (I think months?!) as soon as Adam had sent out the link to the groomsmen and once he got them in, we didn’t think much of it.  On the afternoon of the wedding (1:20 pm) I get a text from my hubs saying “I think I have the wrong pants…” to which I responded “ARE YOU SERIOUS?!?!!?!?!?!?!?!” and also “You’re no longer in the wedding!!” #abitdramatichuh And later found out, the hubs ordered the wrong colored pants (basically white compared to the tan color they were supposed to be!) and the only store in town was a thrift store.. so off he went with the right colored pants to find a pair to match- best $2.50 he spent?! Probably so!! That’s the reason they look a little “Grandpaish” if you were wondering why they had so many pleats! Boys.. 🙂

 Jess said she’d take a picture for my blog- and the girls were all in! Funny that just when you think no one really reads this little space, you get surprised every now and then 🙂  These sisters were pretty sweet 🙂 Good to see you girls again!!

Dirty Thirty!

A) Who coined the term “dirty thirty” and B) what makes it so dirty?? Do all things change after you turn 30 and now you’re thought of as “dirty” or is that only if a “dirty” party is thrown?  I never understand that stuff.. and to be honest, I probably don’t spend too much time thinking about it yet since i’m not 30 but every now and then… i’d like to know these things!!

Anyway- the reason I’m even talking about 30 is because..

Today.. my hubby turns 30!!

He’s pretty sensitive about this (his response for what he wants to do today – is to buy a casket or do his taxes since he’s officially “old”) BUT I always say we’re lucky to get older since not everyone is given that so let’s celebrate– or I say that now that I’m only 28.. 😉

The weekend I met Logan in January 2010! My how we’ve changed!!

I met my hubs almost 7 years ago and it’s been a whirlwind ever since!  We bought our first home 3 years ago, I learned how to play golf for him 2 years ago (if you call my skills “learned”) and I married him 9 months ago!

We’ve had our fair share of ups and downs (hello, we’re not perfect!) – have moved 4 times (all in the cities until we bought our home) – have changed jobs 3 times (me different companies and him with the same company!) – have 2 puppies together and are more excited about the future than ever!

He even puts up with me – making him do a second photo shoot in our wedding attire with snow on the ground 🙂

I am so blessed to call this man my husband.  He continues to put us first and will do anything he can to make sure we’re happy.  Recently, we’ve had some personal things going on and I can truly say I have never been more in love with my husband than I am today and yet somehow I know I’ll love him even more tomorrow!  Cliche, I know.. he’s truly my greatest blessing and I am so thankful that I get to do life with him.

Today (and everyday) I am beyond grateful for him and will continue to thank God (and my lucky stars) that he found me and chose me to be his wife!

We’re all about celebrating today (or at least I am :)).  So bring on the golf, drinks and fun times to bring my hubs into his 30’s!  And if you know him, tell him “Happy Birthday!” because #whynot?

Logan – Thank you for putting up with me on bad days, good days and hard days and for always putting a smile on my face.  I can’t imagine doing life with anyone else and I’m so thankful for all the love we share!

I said it in my vows and I’ll say it again, I promised to choose you then and I promise to choose you every day for the rest of our lives – even if you’re “old” now!

It’s wedding weekend for this girl and I couldn’t be more excited!!  This girl has been there for the hubs and I for so so many years (and was a bridesmaid at our wedding in December!) and we are so honored (and ecstatic) about standing next to her and her fiance for their wedding tomorrow!  Bring on the fun times!  Can’t wait to share more details with you next week!  It’ll definitely be a day/night to remember!

I know it’s September… but I’ve been wanting to go to this show for the past few years and something always comes up so it doesn’t work out.  BUT NOT THIS YEAR!!! I already purchased tickets (early) and am making the hubs do a date night with me downtown to kick off Christmas with this show 🙂 To say I’m excited is a total understatement! I cannot wait!

Speaking of Christmas.. I am almost done with Christmas shopping.. and it’s only September!  I’m pretty stoked about this because come Christmas season and i’ll be able to focus on the traditions and fun parts – although shopping will still happen.. it won’t be as stressful 🙂

Mums on mums on mums!  Last weekend I picked out a few with my Mama and it’s always so much fun!  I can’t wait to share pictures of our front step with these 🙂

The hubs turns 30 on Monday – check back for that special post 🙂 And I can’t help but reminisce on our wedding date 9 months ago! I came across our highlight video from our wedding recently and it’s honestly so special to us! We might not have gotten the snow we thought we’d get (it was December in Minnesota!), we might not have had the best vendors like we thought, everything wasn’t “perfect” but I got to marry my best friend and I wouldn’t change that for even all the “perfect”!
